Adzuki Bean Sprouting

Adzuki are small red beans that originated in China. The delicious sprouts are very nutritious, rich in protein, iron, potassium, magnesium, manganese, copper, zinc and B vitamins. They are easy to digest compared to other beans and are believed to help regulate cholesterol. Best eaten lightly steamed or added at the last minute to a stir-fry. Preparation: Use a jar, bag or dome sprouter. Wash seed, ½ cup to a 650ml jar sprouter. Soak for 8 -12 hours; pick out any seeds that have failed to swell. Rinse well 2-3 times per day. If you can't be at home on hot days, refrigerate the sprouts until you get back. Stop sprouting once tiny roots emerge. Sprouts will be ready in 2 - 3 days with an expected yield of 1 cup. Try to avoid very hot or cold weather; best temperature is between 20 - 25°C. Store well-drained sprouts in the fridge; choose a container that breathes.
