Alfalfa is the most popular sprout with a delicious nutty flavour. It is highly nutritious and rich in vitamins B1, B2, C, E, K, D and especially vitamin A; minerals such as phosphorus, calcium (five times more than milk), magnesium, iron, potassium, sulphur, zinc; and has a good quantity of protein (35%) and fibre. Alfalfa sprouts are used to support convalescence, and to prevent anaemia and osteoporosis.

Container: Use a jar sprouter or dome sprouter
Soak time: Wash seed, then soak for 3 - 6 hours
Sow When: Try to avoid very hot weather; temperatures between 16°C - 22°C work best
Quantity: 1 heaped tsp to a 650ml jar sprouter
Rinses per day: 2 - 3 times; if you can't be at home on hot days, refrigerate the sprouts until you get back
Harvest: 3 - 5 days
Yield: 1½ cups
Storage: Store well-drained sprouts in the fridge, use a container that breathes; avoid plastic bags; rinse every few days
