This is a heritage vegetable, grown commercially since the 18th century in Poland. It is a type of beetroot, with large, 1-2 kg, off-white roots. The leaves and roots can both be eaten but usually the roots are grown for sugar production. It is useful for sweetening preserves by putting a few slices in the bottle, in making homemade wine and as animal fodder.
