The tender leaves are rich in vitamins A, B, C, E, K; minerals such as potassium, calcium, magnesium and chlorophyll. It is believed to stimulate the immune system and have a tonic effect. Red Cabbage also makes a delicious and colourful microgreen when grown in a tray.

Container: Use a jar sprouter or dome sprouter
Soak time: Wash seed, then soak for 6 - 12 hours
Sow When: Avoid very hot weather; temperatures between 16 - 28°C work best
Quantity: 1 heaped tsp to a 650ml jar sprouter
Rinses per day: 2 - 3 times; avoid the seeds clumping together
Harvest: 3 - 6 days
Yield: 1 cup
Storage: Store well-drained sprouts in the fridge, use a container that breathes; avoid plastic bags; rinse every few days
