Chickpea Sprouting

A sprout with a nutty flavour and crunchy texture. It can also be cooked, in casseroles or hommos, to bring out the flavour. Chickpea sprouts have a high content of carbohydrates and protein (20%) and contain vitamins A, C, B, B17 and E; folic acid and minerals. They are recommended to prevent heart disease, hypertension and other circulatory system illnesses, as they help to regulate cholesterol and insulin. Prepare ½ cup to a 650ml jar sprouter by washing it, then soaking it for 8 - 12 hours. Pour the soaked seed into a jar, bag or dome sprouter. Rinse well 3 - 4 times per day. If you can't be at home on hot days, refrigerate the sprouts until you get back. Sprouts will be ready in 2 - 4 days with an expected yield of 1½ cups. Try to avoid very hot or cold weather; best temperature is between 20 - 25°C. Store well-drained sprouts in the fridge, choose a container that breathes.
