Anaheim' turns from dark-green to glossy deep-red when ripe. The conical, fleshy fruits reach 15 - 20 cm long x 3 cm wide. Used at the green stage they are very mild. In traditional Mexican cooking they can be stuffed, roasted or fried; also suitable for freezing. Days to harvest: 77 days for red fruit; used fresh or dried as 'chile seco del norte'. Scoville heat scale 500 - 2,500 units.
