Botanical name: Trigonella foenum- graecum

Fenugreek is a legume adapted to winter rainfall areas. It is a cool season plant, tolerant of frost and a wide range of soils. The seed is used as a spice, the plant as a high protein forage crop or as a green manure. It has deep roots, and is excellent for loosening heavy clay soils.

Harvest as a spice: Allow the seed pods to ripen and turn yellow; then pick and air-dry in a paper sack until pods open

Green manure: Slash or dig in just as flower buds form, this takes approx 3 months
