Golden Purslane is a popular salad leaf in France with a crisp texture and mild taste. It is very heat tolerant so makes a good summer green for hot weather. It can also be used as a cooked green or for pesto. The golden leaves are juicy and tender and 4 times the size of the wild herb. It is an excellent source of natural antioxidants and very high in vitamins.
