Lentils Sprouting

Lentil sprouts have a sweet, crunchy, mild, nutty flavour. They can be eaten raw or lightly steamed. High in protein (25%), carbohydrate, vitamins and minerals. Lentil sprouts are believed to help regulate cholesterol and blood sugar levels. Prepare ½ cup (per 650ml jar sprouter) of seed by washing it, then soaking for 8-12 hours. Pour the soaked seed into a jar, bag or dome sprouter. Rinse well 3 times per day. If you can't be at home on hot days, refrigerate the sprouts until you get back. Sprouts will be ready in 2-4 days with an expected yield of 1 cup. Try to avoid very hot weather; best temperature for sprouting is between 18-22°C. Store well-drained sprouts in the fridge; choose a container that breathes and avoid plastic bags; rinse and drain every few days.
