The crisp & juicy sprouts of the mung bean are very nutritious, rich in protein, minerals & vitamins; they are believed to help regulate cholesterol. Eat them lightly steamed. Prepare ½ cup (per 650ml jar sprouter) of seed by washing it, then soaking it for 6 - 12 hours in hot water. Pour the soaked seed into a jar, bag or dome sprouter. Rinse well 2 - 3 times per day. Sprouts will be ready in 4 - 5 days with an expected yield of 1½ cups. To produce long shoots they need to be sprouted in the dark. Try to avoid very hot or cold weather; best temperature is between 20 - 25°C. Rinse the finished sprouts in a bowl of water so any hard seeds fall to the bottom & can be separated. Store well-drained sprouts in the fridge, choose a container that breathes & avoid plastic bags; rinse & drain well every few days.
