A very ornamental edible plant with stems and leaves of vibrant crimson, 'Ruby Red' makes an eye-catching, waist-high plume in the garden. It is in the same family as spinach and native to Europe and Asia. Young, tender leaves and sprouts are a luminous red and can be used in salads and salad mixes or grown as a microgreen. Older leaves fade to green and have a spinach-like flavour, cook as a nutritious leafy green. It is a good late summer pollen source for beneficial insects. 'Ruby Red' produces tall flower spikes with seeds that start deep crimson and fade to tan. The flower spikes can be used in fresh flower and dried flower arrangements. Heat and wind tolerant and slow to bolt.
