Pea shoot microgreens are sweet and tender as sprouting increases their sugar content. They are very nutritious; a good source of vitamins A, C and K; and minerals calcium, chlorophyll, iron, magnesium, phosphorus, potassium, amino acids and protein (20-25%).
Container: Seedling tray or styrofoam box
Soak time: Wash then soak seed for 8 - 12 hours
Sow When: Best at 15 - 25 °C; avoid hot weather
Quantity: 1 - 1½ cups per seedling tray
Method: Spread organic potting mix or sieved compost to 2 cm deep; moisten the mix; spread the pre-sprouted seeds evenly on top of the mix and gently pat down; cover the tray with a lid or damp paper towel just until roots reach the soil; place the tray indoors on a well-lit bench or outdoors on a covered deck
Days to Harvest: 10 - 14 days; harvest to include 2 - 4 pairs of leaves and immature tendrils, at about 5 -10 cm high
Pre-sprout: In a sprouter for 2-3 days, rinse and drain twice a day until tiny roots appear
