Sweet William is a traditional cottage garden flower that provides a late spring and early summer display. It is a hardy biennial and easy-to-grow. 'Tall Mixed' has large, 10 cm wide flower heads that come in a harmonious range of colours from white to the palest blush pink, to bright fuchsia pink, to deep red shades of carmine. For the gardener, it adds colour and a sweet, peppery fragrance to the garden over a long flowering period. The dense clusters of flowers are produced on sturdy 45 cm self-supporting stems making it useful as a cut flower with a good vase life. The flowers provide nectar for bees, butterflies and birds. In the kitchen, it can be used as an excellent edible flower adding both beauty and nutrition to a dish, as flavonoids are found in the petals. The petals should be removed from the base of the flower as it can be quite bitter. With a sweet clove-like flavour it will complement creamy desserts and is one of the many ingredients in chartreuse liqueur. Use them to easily add decoration to a cake, garnish salads, soups and cold drinks. The plants prefer a sunny open position in moist, fertile, well-drained soil. The seeds germinate at 18 - 22°C; sow spring or autumn in temperate areas; spring in very cool areas; autumn in subtropical areas. Days to bloom: 90 - 100 days.
