Common thyme is the main type used for cooking. It is a perennial herb to 30 cm high with a semi-upright growth habit. The pale pink flowers appear in spring and summer. The leaves can be used fresh or dried in a wide range of savoury dishes. To dry, cut small bunches and hang upside down in a warm, dark, dry place. Once fully dry, rub the leaves off the stems and store in an airtight jar. It makes an attractive edging plant and can be grown in rockeries. Suitable for temperate areas, sow spring after all danger of frost has passed.
