Tree Spinach syn. Magenta Spreen, Giant Lambsquarters is a very large leafy green. The leaves are green and triangular; leaf tips are a very attractive sparkly magenta. Steamed like silverbeet it has a similar taste. Young leaves have a tangy flavour and add a bright splash of colour to salad. It contains oxalic acid so should only be cooked in a stainless steel saucepan. It is a relative of quinoa with edible seeds. Very nutritious with vitamins A, C, K, calcium, iron and potassium. It is pest resistant and easy to grow.
